Mild Heat

Ingredients:

  • 2-large tomatoes; chopped
  • 1-small onion; chopped
  • 1-Jalapeno; stem removed and chopped
  • 1\2-teaspoon fresh oregano; chopped (or 1\4 teaspoon dried)
  • 2-tablespoons fresh lemon or lime juice
  • 2-tablespoons chopped cilantro
  • 1\2-teaspoon salt
  • 1-tablespoon olive oil
  • 1-clove garlic; minced

Instructions:

  1. Wash all fresh ingredients. Wear rubber gloves when touching peppers.
  2. Chunky salsa: Chop everything by hand, place in a bowl and add salt, oil, and lime or lemon juice. Mix together well.
  3. Using a food processor: Place all ingredients in a processor and puree to desired texture.
  4. Cover and chill for 2 hours.
  5. Bring to room temperature before serving.
  6. Keeps in the refrigerator for 2-3 days.
