Mild Heat
Ingredients:
- 2-large tomatoes; chopped
- 1-small onion; chopped
- 1-Jalapeno; stem removed and chopped
- 1\2-teaspoon fresh oregano; chopped (or 1\4 teaspoon dried)
- 2-tablespoons fresh lemon or lime juice
- 2-tablespoons chopped cilantro
- 1\2-teaspoon salt
- 1-tablespoon olive oil
- 1-clove garlic; minced
Instructions:
- Wash all fresh ingredients. Wear rubber gloves when touching peppers.
- Chunky salsa: Chop everything by hand, place in a bowl and add salt, oil, and lime or lemon juice. Mix together well.
- Using a food processor: Place all ingredients in a processor and puree to desired texture.
- Cover and chill for 2 hours.
- Bring to room temperature before serving.
- Keeps in the refrigerator for 2-3 days.
